Eat the Universe: Yancy Street Kugel

Actor and comedian Zach Cherry stops in to serve up this Fantastic Four-inspired dish!

It’s gobblin’ time! In this week’s episode of Marvel’s Eat the Universe, Chef Justin Warner invites Zach Cherry (“Marvel Studios’ Spider-Man: Homecoming”) to whip up a “fantastic” kugel inspired by the Thing!

Kugel is a rich pasta bake that can host a variety of flavors, and this orange-hued Yancy Street Kugel will be well worth the effort when it’s done baking. Make sure to let it cool off — it’ll be as hot as Johnny Storm when it’s fresh out of the oven!

Ingredients:

1/2 lb orange colored pasta

8 cups carrot juice (or water)

1 TB kosher salt

6 eggs

2 cups sour cream

2 cups ricotta

1/4 cup sugar

4 TB butter, melted

2-3 threads saffron

1 tsp cinnamon

1/2 tsp cumin

1/2 cup dried apricots, chopped

Instructions:

Preheat your oven to 375 degrees.

Combine the salt, pasta, and carrot juice and cook over medium heat until the pasta is tender, stirring frequently.  Strain the pasta, allow to cool slightly, and transfer to a greased baking dish.  Don’t wash the pasta!  You can use the pasta liquid as a sauce for another application… I see carrot bolognese in your future!

Combine the remaining ingredients, reserving a few apricot chunks to sprinkle on top of the kugel.

Combine the wetworks with the pasta in the baking dish and bake at 375 degrees or until a knife inserted comes out clean.

Allow to cool slightly before slicing.

Clobber.
